Healthy Lunch Challenge Week 2

Week 2 - egg with avocado on brown rice:
Time: 20, 25 mins if you want to cook brown rice longer
Taste: 8.5/10                        

This was awesome! The combinatation of egg, avocado, and brown rice was more flavorful than I expected; however, if you want more flavor, you can add hot sauce, soy sauce, or other seasonings. Can do a side of baby carrots and hummus/ranch. Makes two servings

1. Start cooking brown rice (I used about 1 cup dry) while you prep other ingredients to save time. Again, cover brown rice with water in a 1:3 ratio, and boil for 20-25 mins. Be sure to occasionally check on it so it doesn't boil over like it did to me :/). If it does, lower the heat.

2. Pour about a tsp of olive oil in a frying pan. Crack an egg into the pan, lightly salt and pepper it, and fry it on low heat. I cooked my egg over easy (cook one side, then flip it over and cook the top). You may want to make another one, as this recipe makes two servings and you already have the equipment out.

3. Thinly slice half a stalk to a full stalk of green onions. Cut a small avocado in half, then into strips, and then cut the strips in half horizontally. 

4. By now the rice should be finished. Put the amount you want in a container and top it with the egg. Wait for the egg and rice to cool before you add the avocado and green onions. Enjoy!
